I do eat healthy food, you know. Every once in a while. Or at least, I like to tell myself that I do. This chai latte, for example, was meant to be a healthy little treat for me the other night when I was feeling a bit under the weather. But, as seems to becoming a habit lately, chocolate magically slipped its way into it. And to be honest, I have never tasted a better chai latte in my life.

An authentic chai latte is made from a combination of black tea, spices, water, and milk. Usually a sweetener is added, too, such as sugar or maple syrup. In this recipe, the sweetener is the white chocolate.

White chocolate is perfect in this and compliments the spices very well, like the two were meant for each other. You can add as much white chocolate as you like until you get the flavor that you want.

White Chocolate Chai Latte

The recipe below is the simplest and doesn’t use frothed milk like you see in the photos. If you do want frothed milk, here’s what you’ll need to do:

In one saucepan, bring all ingredients except for the milk and white chocolate to a boil. Let it sit for 5 minutes, then reheat again and strain through a fine sieve. Add the white chocolate and mix until melted. Gently reheat on low if needed, keeping in mind that white chocolate is sensitive to heat.

In a different saucepan, bring milk to a slight boil, then remove from the heat. Use an immersion blender to blend it until it’s frothy (immersion blenders work like a charm for frothing milk).

Fill cups with half of the white chocolate mixture and top with half of the frothed milk.

YIELD 2 cups

Ingredients

  • 1 cup water
  • 2 black tea bags
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup whole milk
  • ½-1 cup (80-150 g) white chocolate*

Instructions

  1. In a medium saucepan, bring all ingredients except for the white chocolate to a boil. Turn off the heat and allow mixture to sit for 5 minutes to let the flavors blend. Reheat again until hot, then strain mixture through a fine mesh. Add white chocolate and stir vigorously until melted and smooth. Gently reheat again on low heat if needed.
  2. Pour drink into 2 mugs and sprinkle with a pinch of cinnamon, if desired.
  3. Serve hot.

Recipe Notes

* If you prefer a drink that’s not too sweet, half a cup will be enough for a moderately sweet drink with a noticeably chocolate flavor.
