No Bake Nutella Peanut Butter Bites (Truffles)

These crunchy bites will dazzle you with their unique peanut butter and nutella flavor. This is a great recipe to make together with kids. And the best part? No baking involved! Great for an after-school snack for the kids or with your coffee. 

Nutella Peanut Butter Balls

When I was a kid, my mom used to make us biscuity chocolate truffles all the time. I helped her with melting te chocolate, crushing the cookies, and rolling them in different toppings. My favorite topping was sprinkles, because I was a girly girl.

These balls aren’t exactly truffles but they have a fudgy texture that remind me of truffles. They are made of peanut butter, Nutella, butter, milk, and crushed cookies so you must have an idea of how crazy good they are. If this is your first time combining peanut butter with Nutella, you won’t understand how you haven’t thought of it before. Just mix one teaspoon of peanut butter together with one teaspoon of Nutella and you’ll see what I mean.

How To Make Nutella Peanut Butter Bites

If the Nutella and peanut butter are not soft and creamy, melt them together for a few seconds in the microwave. In a large bowl whisk Nutella, peanut butter and butter, mixing until combined and smooth. Add crushed cookies and mix. Add 2-3 tablespoons of milk, until the ingredients start to stick together and form a dough-like consistency,and the mixture is no longer crumbly and can easily be rolled into balls. Refrigerate the mixture for at least 30 minutes for easy rolling.

Shape mixture into balls the size of heaping tablespoons. Roll in toppings of your choice (coconut, cocoa powder, sprinkles, crushed peanuts or hazelnuts). Refrigerate for one hour. Truffles will keep for 5 days in the fridge. They can also be frozen for up to 2 months for best results.

What Cookies Should I Add To Nutella Peanut Butter Bites?

The vanilla wafers adds a nice crunch to the truffles. You can use any cookies or wafers that you like.You’ll need two cups of the crushed cookies, that should be about 200g, depend on the type of the cookies. You don’t want to crush them into a powder, rather into small coarse pieces. If you mistakenly turn the wafers into a powder, it’s ok. It will still taste good, but it will be less crunchy. To crush it, you can either pulse it a few times in the food processor or put it into a small bag and crush them with a wooden spoon or rolling pin.

Now for the hardest part – you’ll need to refrigerate the mixture and wait for at least 30 minutes. This is done to ensure easy rolling (but you can totally taste it now to see how yummy it is).  Once out of fridge, shape into balls and roll in a topping of your choice, or leave plain. Some of my favorite toppings are sprinkles, crushed nuts, coconut, cocoa powder, and powdered sugar.

YIELD 20 truffles (or more if you make them bite-size)

  • ¾ cup Nutella
  • ½ cup peanut butter
  • 3 tablespoons (40 g) unsalted butter, melted
  • 2 cups vanilla wafers or cookies , crushed into coarse crumbs (first crush, then measure – see above post)
  • 2-3 tablespoons milk

Recipe Notes

Store the bites in the fridge. They will stay fresh in an airtight container for up to a week, but probably won’t last that long.
